Freeze a fish:

To freeze a fish in its place, select Create-a-Fish. After
your fish is created, chase a fish. If it runs, press [Esc]
to pause the game. Move the pointer over the fish, then and
click and hold.
If the caption states that the fish is Looking for a place
to hide, chase a different fish. If it states Running from
your fish, resume game play. The fish will stay in the same
place until eaten.
